What we had for dinner last night!

During my 4 months of chemotherapy, many people from the school and our Church provided meals for us. One of my very good friends brought over something called Poppy Seed Chicken. It was delicious! I had never tasted this before and was really impressed! The kids really liked it too....and it's very rare to get them to eat something the very first time they see it on their plates.

So here's the recipe...it's very easy!

4 boneless, skinless chicken breasts
16 oz container of sour cream
1 can cream of chicken soup
1 can cream of celery soup
1/3 cup fresh lemon juice
2 tsp poppy seeds
1 sleeve of Ritz crackers
1/2 cup melted butter

Boil the chicken breasts until done. Cube (or shred) chicken and place on the bottom of a 13 x 9 inch pan after spraying with non-stick spray.
In a large bowl, whisk together the sour cream, soups, lemon juice and poppy seeds until well mixed. Pour evenly over the chicken.
By hand, crush the Ritz crackers (they crumble well!) and mix with the melted butter. You want the crackers and butter to be well mixed. Sprinkle this mixture over the top of the chicken.
Bake at 350 for 25 to 30 minutes.

Serve over rice or pasta. We had brown rice, dinner rolls and a salad! You will not be disappointed! It's ok to omit the lemon juice if you're not into the "lemon & poppy seed" flavor.

Seriously, this is an easy recipe that everyone should try!

One caution. Those who are subject to drug testing shouldn't eat poppy seed. I just google-searched and came up with a Snopes report:
